Jacquesson Champagne Dizy-Corne Bautray Extra Brut 2005 / 2007



       This remarkably rare Champagne uses Chardonnay from vines planted in 1960, and is wonderfully nuanced and complex. Aromas are rich, with dried apricots, mint and white pepper, and even a hint of smoke and very dry finish. Disgorged October 2014 with a minimal dosage, this is drinking beautifully now, but will cellar for 5 years. Perfect gastronimic champagne with seafood.
